Nina's Lunch Frittata!!!






Nina gave me this lunch idea and it was absolutely delicious!! I sautéed half of a medium sweet potato, added green onion, 3 mini bell peppers, and 1/2 a cup raw spinach. I then topped it with two cage free eggs and baked it on 350 degrees for 10 minutes.








Once baked I sprinkled a little cheese on top and placed it under the broiler for 3 minutes. I was so surprised by the yummy medley of flavors!!




I'm naming it Nina's Sweet Potato Frittata!!! Thanks Nina!!

Fallen Off....

Ok, so I know I've totally fallen off the whole eating daily and blogging my experience train and I have to say I'm totally blaming it on my mood. I was still eating vegetarian but I wasn't actively cooking or blogging any of the meals I was eating. I whole heartedly avoided the harsh reality of the realization that "finding my new norm" wasn't just a phase but a permanent life change. Even though I'm pretty sure I haven't fully excepted this fact I am going to make a conscious effort to try.
I've started off by restocking my fridge and preparing a delicious stir fry with brown pad thai rice noodles.




This morning I made a delicious spinach banana smoothie. Go magic bullet, go magic bullet, GO!!
1 1/2 tbsp chia seed soaked in 1/3 cup carrot juice
1 cup spinach
1 small banana
1 cup mixed frozen fruit
2/3 cup orange juice

Salmon On A Plank!






Angelique invited me over for Salmon on a plank and I brought a long some veggie skewers. We put two on a plank and grilled the other two. Dinner was delicious! I even had a small piece of her Salmon, even though I was going to save fish for the day I find myself craving meat! It was delicious!





Veggie Pizza












Today I made the best homemade pizza EVER!! The recipe is from the Whole Foods App and calls for Heirloom Tomatoes, which are absolutely delicious and almost didn't make it on the pizza because I kept ratting them. No pizza sauce required and all the veggies, except for the tomatoes, are grilled prior to adding them to the pizza. Absolutely delicious! Nina gave me a great tip which was to spread garlic infused olive oil on the crust prior to adding the toppings. This really helped the crust crisp up and added great flavor. I did not use cornmeal dough i just used a pre made whole white one. Here's the link to the pizza

I really enjoyed cooking today and am so glad I tried Heirloom Tomatoes! I also learned a new way to avoid the dreaded pizza sauce decision(white sauce, red sauce, pesto, or no sauce)! Lol
















Carrot Apple Smoothie






I tried a new smoothie recipe today that Nina gave me. It was very interesting and one that I will defiantly try again since I'm pretty sure I added a little to much thyme. It's apple, carrot juice, lemon juice, fresh thyme and ice. My mom had one as well and she said it was pretty good.

The Past 2 Wks....

After being sick for a week and Not having the energy to cook, I was so glad that I had soup as well as spaghetti sauce frozen in my freezer. Here are the past two weeks of food in a nut shell.




On the right is my FreeBirds veggie rice bowl which was absolutely delicious, I think. I wasn't really able to taste anything due to being thoroughly congested.




I went to dinner with Logi & Angelique at Mooyahs and had the best veggie burger ever!!
I also had a horrible craving for Chicken Noodle Soup while I was sick and decided to make my own soup out of vegetable bouillon, a can of fire roasted tomatoes, fresh herbs and every single vegetable in my fridge which needed to be cooked. It was absolutely delicious. Although I could have sworn I took a picture of it, I can't seem to find it lol. I guess that's what happens when u attempt to cook while your sick. The name of the soup is"Fuck You.... Chicken Noodle.... Soup!" because that is what came out of my mouth as I was ratting this delicious medley of broth, tomatoes, and veggies!




I also received fresh vegetables on Wednesday but since I wasn't feeling well, they ended up in the fridge still in the go green bag Angelique had put them in.
Hopefully I'm back on track!! I swear I took more pictures.... But who knows maybe I didn't swivel the camera and that's why I have5 pictures if my face while I was sick. Lol

Pasta Redo

I decided to sauté some garlic, scallions, mushrooms and broccoli, toss in the pasta from yesterday and re roast the tomatoes for Melissa and I. It turned out absolutely delicious and stretched my leftovers so that there was enough for 2. Melissa really enjoyed it and ate mushrooms (which she cant stand) for the first time in years.

Best Smoothie Ever!

Ok so I just made the best smoothie EVER!

3 frozen strawberries, 6 frozen raspberries, 4 frozen peach slices, 3/4 small banana, a bunch of pomegranate seeds, 1/3 cup carrots juice and 1/3 cup orange juice











Fundalentil Soup

Thanks Nina! This Lentil Soup is the best soup recipe EVER!! It was my first time cooking Lentils and I have to say I was nervous as hell! The Lentils I used turned out to be a mixed bag of Lentils and Rice but the rice still cooked nicely and the soup was delicious!! Thanks for adding this recipe for me Nina!


  • 1 tsp olive oil

  • 1-1/2 cups chopped onions

  • 1 cup chopped celery

  • 2 cloves garlic,minced

  • 7 cups veg. broth

  • 28 oz diced tomatoes,undrained

  • 10-3/4 tomato soup,undiluted

  • 2 cups lentils

  • 2 cups chopped carrots

  • 2 cups peeled, diced sweet potatoes

  • 2 tsp dried oregano, 1-1/2 tsp ground cumin, 1 tsp ground coriander

  • 1 tsp salt, 1/2 tsp black pepper, 1/8 tsp ground nutmeg

  • 2 cups packed, chopped fresh spinach


Heat olive oil in large soup pot over medium heat.  Add onions, celery and garlic. Cook and stir for 3 to 4 min, until veg. begin to soften.
Add all remaining ingredients, except spinach. Bring to boil.  Reduce heat to medium-low, cover and simmer for 15 more min. serve hot
Makes 12 servings
per serving:  199 calories, 2g fat, 0.1g saturated fat, 12.3g protein, 34.9g carbs, 12.2g fiber, 0mg cholesterol, 361.6mg sodium

I love the way the Whole Foods App has its recipes set up especially since it includes nutritional information for each recipe, but have to say I'm not a fan of this soup.... Actually it was pretty disgusting..... :( I love curry and am not sure of it was the almond milk or lack of another flavor except for curry seasoning, but I have to say this curry soup endeavor was an EPIC FAIL!!!

Growing Mushrooms

I found the coolest "grow your own" mushrooms box at Whole Foods Market. You have to cut slits in the bag, then soak it for 24 hours, then replace the bag into the box and mist it twice a day.... Mushrooms should be growing soon!!

1st Veggie Spaghetti

Last night I made my first batch of Vegitarian Spaghetti, I say batch because it is nearly impossible to cook a small amount of Spaghetti sauce. I have always enjoyed having a chunky veggie filled sauce but this time I incorporate some veggies that I would have previously not considered..... On top of the usual mushrooms, bell pepper, fire roastd tomatoes, and onion I added zucchini, fresh garlic, fresh spinach, fresh basil and eggplant. My sauce came out so absolutely wonderful, it totally satisfied my spaghetti craving.

The pasta I used was an all natural whole wheat and spinach pasta. This was my first time using this pasta as well and I don't believe I will use it again. It was rather soft and mushy even though it only cooked for five minutes. The color was nice but texture was off. :)

I have decided to freeze two servings of this sauce and am rather excited to see how it tastes in a couple of weeks since I usually am opposed to any type of "freeze for later" foods due to an ingrained fear of freezer burn. Lol

My first side dish....

So after being bullied into going to a Girls only Game Night I came up with the best Vegetarian side dish ever! I picked up pre made Texas Caviar, California Quinoa Salad, Garden Veggie Salad Rolls and Philly Fruit Salad Rolls from Wole Foods Market and placed them all on a platter. It was a great success and I am looking forward to actually cooking with Quinoa since I now know what it tastes like.
