- 1 tsp olive oil
- 1-1/2 cups chopped onions
- 1 cup chopped celery
- 2 cloves garlic,minced
- 7 cups veg. broth
- 28 oz diced tomatoes,undrained
- 10-3/4 tomato soup,undiluted
- 2 cups lentils
- 2 cups chopped carrots
- 2 cups peeled, diced sweet potatoes
- 2 tsp dried oregano, 1-1/2 tsp ground cumin, 1 tsp ground coriander
- 1 tsp salt, 1/2 tsp black pepper, 1/8 tsp ground nutmeg
- 2 cups packed, chopped fresh spinach
Heat olive oil in large soup pot over medium heat. Add onions, celery and garlic. Cook and stir for 3 to 4 min, until veg. begin to soften.
Add all remaining ingredients, except spinach. Bring to boil. Reduce heat to medium-low, cover and simmer for 15 more min. serve hot
