First Meal

My first meal cooked in 7 months.... All organic & oh so yummy! Wild mushrooms, scallions, parsley, cabbage, mini bell peppers, pepper and German garden seasoning lightly sautéed in Olive Oil, tossed with a handful of mixed beans and served over Forbidden Rice. My mom ate my first home cooked Vegetarian meal with me. ;)

  1. Roasted Portobello & Goat Cheese Sandwich (4serv)
    *1lb portobello mushrooms,stemmed & cut into 1/4in slices,*1 1/2tsp olive oil,*1/2cup chevre (spreadable goat cheese),*1/2 shallot finely chopped,*1tbsp fresh lemon juice,*2tsp chopped fresh thyme,*1/2 black pepper,* sea salt,*4 whole wheat hamburger buns,*4 cups arugula...
    Preheat oven to 375. In large bowl toss mushrooms and oil. arrange mushrooms on sheet pan and rost until tender (20min) toss halfway through. in medium bowl combine chevre,shallot,lemon juice,pepper and salt; set aside. remove mushroom from oven and cool slightly. Toast buns. layer rolls with chevre mix, mushrooms and arugula, dividing evenly. Serve Warm. Enjoy :)
