Tonight was the first night I actually cooked since Sunday and it went really well. I tossed Brussels sprouts, green onions, wild mushrooms, garlic, Knorr seasoning, one small potato, and a beet in olive oil and roasted them for 35 minutes. I was a little concerned because the potatoes did not seem to brown but once I tossed them again, after I took them out of the oven, I realized the bottoms had browned nicely. :)
